  • 23 tbsp milk
  • 1/2 tsp vanilla extract

  2. Mix the batter: In a large bowl, combine the cake mix, eggs, vegetable oil, sour cream, and vanilla. Beat until smooth, then gently fold in the diced rhubarb.
  3. Assemble: Spread the batter evenly into the prepared baking dish. Mix together the sugar, cinnamon, and melted butter, then drizzle and sprinkle over the top.
  4. Bake: Bake for 35–40 minutes, or until the cake is golden and a toothpick inserted into the center comes out clean.
  5. Cool and serve: Allow the cake to cool for at least 20 minutes. If desired, whisk together the glaze ingredients and drizzle over the cooled cake before slicing and serving.

Notes

Fresh rhubarb works best, but frozen rhubarb can also be used after thawing and draining well. For extra texture, stir chopped pecans or sliced almonds into the batter. This cake stays moist for several days when stored in an airtight container.
