  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups vegetable broth
  • 1 can (15 oz) cannellini beans, drained and rinsed
  • 1 cup asparagus, cut into 1-inch pieces
  • 1 cup peas (fresh or frozen)
  • 1 zucchini, diced
  • 1 cup small pasta (ditalini or small shells)
  • 1 tsp dried oregano
  • 1/2 tsp dried thyme
  • 2 cups baby spinach
  • 1/4 cup grated Parmesan cheese, plus more for serving
  • 1 tbsp fresh lemon juice
  • Salt and black pepper, to taste

  1. Sauté the vegetables: Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery. Cook for 5–6 minutes until softened.
  2. Add garlic and cook for 1 minute until fragrant.
  3. Build the soup: Pour in the vegetable broth and add cannellini beans, oregano, and thyme. Bring to a boil.
  4. Add the pasta and cook for 6–8 minutes.
  5. Stir in the asparagus, zucchini, and peas. Simmer for another 5–7 minutes until vegetables are tender.
  6. Add the spinach and stir until wilted.
  7. Stir in Parmesan cheese and lemon juice.
  8. Season with salt and black pepper to taste.
  9. Serve: Ladle into bowls and garnish with additional Parmesan cheese if desired.

Notes

Use whatever fresh spring vegetables are available, such as green beans, fava beans, or baby kale. If making ahead, cook the pasta separately and add it before serving to prevent it from becoming too soft.
