  • 2 zucchini, sliced into thick rounds
  • 2 yellow squash, sliced into thick rounds
  • 2 red bell peppers, cut into chunks
  • 1 yellow bell pepper, cut into chunks
  • 1 red onion, cut into wedges
  • 8 oz whole button mushrooms
  • 1 pint cherry tomatoes

For the Marinade

  • 1/4 cup extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1 tsp dried oregano
  • 1/2 tsp smoked paprika
  • 1/2 tsp kosher salt
  • 1/4 tsp freshly ground black pepper

  • Fresh parsley
  • Fresh basil
  • Crumbled feta cheese
  • Grated Parmesan cheese
  • Lemon wedges

  1. Prepare the vegetables: Wash and cut all vegetables into evenly sized pieces for uniform grilling.
  2. Make the marinade: In a bowl, whisk together olive oil, balsamic vinegar, garlic, Italian seasoning, oregano, smoked paprika, salt, and pepper.
  3. Marinate: Toss the vegetables with the marinade and let them sit for 20–30 minutes.
  4. Assemble the skewers: Thread the vegetables onto metal or soaked wooden skewers, alternating colors for an attractive presentation.
  5. Grill: Preheat the grill to medium-high heat (about 400°F). Grill the skewers for 10–12 minutes, turning every few minutes until tender and lightly charred.
  6. Finish: Remove from the grill and drizzle with any remaining marinade or a squeeze of fresh lemon juice.
  7. Serve: Garnish with fresh herbs or cheese if desired and serve immediately alongside your favorite grilled dishes.

Notes

For the best results, cut the vegetables into similar sizes so they cook evenly. Soak wooden skewers in water for at least 30 minutes before grilling to prevent burning. These skewers are also delicious cooked in an air fryer or oven if a grill isn’t available.
