- 1 cup uncooked orzo pasta
- 3 cups chicken broth
- 1/2 cup heavy cream
- 1 cup shredded Gruyère or Swiss cheese
- 1/2 cup shredded mozzarella cheese
- Fresh parsley for garnish (optional)

- Preheat oven to 375°F (190°C).
- In a large oven-safe skillet or pot, melt butter over medium heat. Add onions and cook, stirring often, until deeply caramelized, about 20 minutes.
- Add garlic and cook for 30 seconds until fragrant.
- Add diced chicken, salt, pepper, and thyme. Cook until chicken is lightly browned.
- Stir in orzo, chicken broth, and heavy cream.
- Bring to a simmer, then remove from heat.
- Top with Gruyère and mozzarella cheese.
- Bake uncovered for 20–25 minutes, until orzo is tender and cheese is bubbly and golden.
- Let rest 5 minutes before serving. Garnish with parsley if desired.
Notes
For extra French onion flavor, add a splash of Worcestershire sauce or beef broth. This casserole reheats beautifully and makes great leftovers.
