  • 2 tbsp unsalted butter
  • 5 cloves garlic, minced
  • 1 tsp Italian seasoning

  • 1 tsp dried rosemary
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper

For the Creamy Mashed Potatoes

  • lbs Yukon Gold potatoes, peeled and cubed
  • 4 tbsp unsalted butter
  • 1/2 cup heavy cream
  • 1/4 cup whole milk
  • 1/2 cup grated Parmesan cheese (optional)
  • Salt and pepper to taste

Optional Garnish

  • Fresh parsley, chopped
  • Extra melted garlic butter
  • Fresh thyme sprigs

  1. Prepare the potatoes: Place peeled potatoes in a large pot of salted water. Bring to a boil and cook for 18-20 minutes until fork tender.
  2. Season the chicken: Pat the chicken dry and season both sides with salt, pepper, paprika, Italian seasoning, thyme, and rosemary.
  3. Cook the chicken: Heat olive oil in a large skillet over medium-high heat. Cook chicken for 5-6 minutes per side until golden brown and fully cooked. Add butter and minced garlic during the last 2 minutes, continuously spooning the garlic butter over the chicken.
  4. Make the mashed potatoes: Drain the potatoes and mash with butter, heavy cream, milk, Parmesan (if using), salt, and pepper until smooth and creamy.
  5. Serve: Spoon mashed potatoes onto plates, top with garlic herb chicken, drizzle with the garlic butter sauce from the skillet, and garnish with parsley before serving.

Notes

Allow the chicken to rest for 5 minutes before slicing to keep it juicy. Yukon Gold potatoes provide a naturally buttery texture, while Russet potatoes create extra fluffy mashed potatoes. Add steamed green beans or roasted broccoli for a complete meal.
