  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • Salt and black pepper, to taste

For the Garlic Tomato Sauce

  • 4 cloves garlic, minced
  • 2 cups cherry tomatoes, halved
  • 1 can (14.5 oz) diced tomatoes
  • 1 tbsp tomato paste
  • 1/2 cup chicken broth
  • 1 tsp Italian seasoning
  • 1/2 tsp crushed red pepper flakes (optional)
  • 1 tbsp fresh basil, chopped

For the Topping

  • 8 oz fresh mozzarella, sliced
  • 2 tbsp grated Parmesan cheese
  • Fresh basil leaves for garnish

  1. Season the chicken: Pat the chicken dry and season both sides with Italian seasoning, garlic powder, smoked paprika, salt, and pepper.
  2. Sear: Heat the olive oil in a large skillet over medium-high heat. Cook the chicken for 5-6 minutes per side until golden. Remove and set aside.
  3. Make the sauce: In the same skillet, sauté the garlic for 30 seconds. Add the cherry tomatoes, diced tomatoes, tomato paste, chicken broth, Italian seasoning, and red pepper flakes. Simmer for 8-10 minutes until slightly thickened.
  4. Finish the dish: Return the chicken to the skillet and spoon the sauce over each piece. Top with mozzarella slices and Parmesan cheese. Cover for 3-5 minutes until the cheese is melted and the chicken reaches an internal temperature of 165°F (74°C).
  5. Serve: Garnish with fresh basil and serve hot over pasta, mashed potatoes, rice, or with crusty bread.

Notes

Chicken thighs can be substituted for extra juicy results. For even more flavor, finish with a drizzle of balsamic glaze before serving. Leftovers store well in the refrigerator for up to 3 days and reheat beautifully for meal prep.
