For the Chicken Skewers

  • 2 lbs boneless, skinless chicken breasts, cut into -inch cubes
  • 2 tbsp olive oil
  • 2 tbsp melted butter
  • 1 packet (1 oz) ranch seasoning mix
  • 4 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1/2 tsp black pepper
  • 1/2 cup freshly grated Parmesan cheese
  • 8 wooden or metal skewers

For the Garlic Butter Finish

  • 2 tbsp melted butter
  • 2 cloves garlic, minced
  • 2 tbsp grated Parmesan cheese
  • 1 tbsp chopped fresh parsley

  1. Marinate the chicken: In a large bowl, combine olive oil, melted butter, ranch seasoning, garlic, smoked paprika, black pepper, and Parmesan cheese. Add the chicken cubes and toss well. Cover and refrigerate for at least 30 minutes.
  2. Assemble the skewers: Thread the marinated chicken evenly onto skewers, leaving small spaces between pieces for even cooking.
  3. Grill: Preheat the grill to medium-high heat. Grill the skewers for 10–12 minutes, turning every few minutes, until the chicken reaches an internal temperature of 165°F (74°C).
  4. Prepare the garlic butter: Stir together melted butter, garlic, Parmesan cheese, and parsley in a small bowl.
  5. Finish and serve: Brush the hot skewers generously with the garlic butter mixture. Serve immediately with ranch dressing, grilled vegetables, or your favorite side dishes.

Notes

If using wooden skewers, soak them in water for at least 30 minutes before grilling to prevent burning. Chicken thighs can be substituted for extra juicy skewers. For even more flavor, sprinkle additional Parmesan over the skewers just before serving.
