  • 1/4 cup chopped fresh parsley
  • 1 cup shredded mozzarella cheese

  • 1/2 cup mayonnaise

  • 1 tbsp honey
  • 1 tbsp apple cider vinegar
  • 1 tsp Dijon mustard

  • Salt and black pepper, to taste

  3. Assemble the salad: In a large mixing bowl, combine the cooled tortellini, pineapple, ham, bell pepper, cucumber, carrots, green onions, parsley, and mozzarella cheese.
