  • 1/2 cup fresh lemon juice (about 34 lemons)
  • 1/3 cup honey (adjust to taste)
  • 68 fresh thyme sprigs
  • 1 tsp lemon zest
  • Ice cubes
  • Lemon slices and thyme sprigs, for garnish
  • Sparkling water (optional for fizzy version)

  1. Infuse thyme: In a small saucepan, bring 2 cups of water to a gentle simmer. Add thyme sprigs and lemon zest.
  2. Remove from heat and let steep for 10–15 minutes.
  3. Strain: Strain out thyme and zest, then let the liquid cool.
  4. Mix drink: In a large pitcher, combine cooled thyme infusion, remaining 2 cups water, lemon juice, and honey. Stir until honey is fully dissolved.
  5. Chill: Refrigerate for at least 30 minutes.
  6. Serve: Pour over ice and garnish with lemon slices and fresh thyme sprigs.
  7. Optional: Top with sparkling water for a fizzy refresher.

Notes

For a stronger herbal flavor, steep thyme longer. You can also substitute thyme with rosemary or basil for a different twist. Adjust sweetness depending on lemon tartness.
