- Strain: Strain out thyme and zest, then let the liquid cool.
- Mix drink: In a large pitcher, combine cooled thyme infusion, remaining 2 cups water, lemon juice, and honey. Stir until honey is fully dissolved.
- Chill: Refrigerate for at least 30 minutes.
- Serve: Pour over ice and garnish with lemon slices and fresh thyme sprigs.
- Optional: Top with sparkling water for a fizzy refresher.
Notes
For a stronger herbal flavor, steep thyme longer. You can also substitute thyme with rosemary or basil for a different twist. Adjust sweetness depending on lemon tartness.
