- In a small saucepan, bring 2 cups of water to a gentle boil.
- Add thyme sprigs and let steep for 5–7 minutes.
- Remove from heat, strain out thyme, and stir in honey until dissolved.
- Allow the mixture to cool slightly, then add fresh lemon juice.
- Add cold water or ice to chill and adjust strength.
- Serve over ice, garnished with lemon slices and thyme sprigs.
Notes
Adjust honey and lemon to your taste. For a sparkling version, replace cold water with soda water just before serving.
