- Cream butter and sugar: In a large bowl, beat softened butter and brown sugar until creamy. Add eggs and vanilla and mix until smooth.
- Combine dry ingredients: In another bowl, whisk together flour, baking soda, cinnamon, and salt.
- Mix together: Gradually add dry ingredients to butter mixture. Stir in oats, then raisins and nuts if using.
- Form cookies: Drop tablespoon-sized balls of dough onto prepared baking sheets, spacing about 2 inches apart.
- Bake: Bake 10–12 minutes, until edges are lightly golden. Allow cookies to cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
For extra chewiness, slightly underbake the cookies. Store in an airtight container at room temperature for up to 5 days. Add a pinch of nutmeg or allspice for additional warmth and flavor.
