  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 3 cups old-fashioned rolled oats
  • 1 cup raisins or currants (optional)
  • 1/2 cup chopped walnuts or pecans (optional)

  1. Preheat oven: Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Cream butter and sugar: In a large bowl, beat softened butter and brown sugar until creamy. Add eggs and vanilla and mix until smooth.
  3. Combine dry ingredients: In another bowl, whisk together flour, baking soda, cinnamon, and salt.
  4. Mix together: Gradually add dry ingredients to butter mixture. Stir in oats, then raisins and nuts if using.
  5. Form cookies: Drop tablespoon-sized balls of dough onto prepared baking sheets, spacing about 2 inches apart.
  6. Bake: Bake 10–12 minutes, until edges are lightly golden. Allow cookies to cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For extra chewiness, slightly underbake the cookies. Store in an airtight container at room temperature for up to 5 days. Add a pinch of nutmeg or allspice for additional warmth and flavor.
