  • 12 cups vegetables (bell peppers, zucchini, onion, mushrooms)
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tbsp lemon juice or vinegar
  • 1 tsp paprika
  • 1/2 tsp dried oregano or Italian seasoning
  • Salt and pepper to taste
  • Wooden or metal skewers
