- 2 tbsp olive oil
- 3 large onions, thinly sliced
- 4 cloves garlic, minced
- 2 cups beef broth
- 1 cup dry white wine (optional)
- 2 tbsp Worcestershire sauce
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and freshly ground black pepper, to taste
- 2 tbsp all-purpose flour (optional, for thickening)
- Fresh parsley, chopped, for garnish

- Preheat oven to 325°F / 165°C.
- Season roast generously with salt and pepper.
- In a large Dutch oven or oven-safe pot, heat olive oil over medium-high heat. Sear roast on all sides until browned, then remove and set aside.
- In the same pot, add sliced onions and cook until caramelized, about 10–15 minutes. Add garlic and cook 1 minute more.
- Deglaze with wine if using, scraping up browned bits, then add beef broth, Worcestershire sauce, thyme, and rosemary.
- Return roast to pot, cover, and transfer to the oven. Cook 3–3.5 hours, or until beef is fork-tender.
- Optional: Remove roast and whisk in flour to thicken the sauce on the stovetop for 5–10 minutes.
- Slice roast, serve with caramelized onions and sauce, and garnish with fresh parsley.
Notes
For extra flavor, let the roast sit covered for 15 minutes before slicing. Serve with mashed potatoes or roasted vegetables. Leftovers store well in the fridge for up to 3 days.
