  • 3/4 cup sugar

  • 1 tbsp lime zest
  • 1/4 cup fresh lime juice
  • 1/2 cup milk
  • 1 tsp vanilla extract

  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 1/2 cups powdered sugar
  • 12 tbsp lime juice
  • 1 tsp lime zest
  • 1/2 tsp vanilla extract

  1. Preheat oven: Set to 350°F (175°C) and line a cupcake pan.
  2. Mix dry ingredients: Whisk flour, baking powder, baking soda, and salt.
  3. Cream butter & sugar: Beat until light and fluffy. Add eggs one at a time.
  4. Add flavor: Mix in lime zest, lime juice, and vanilla.
  5. Combine: Alternate adding dry ingredients and milk until smooth.
  6. Bake: Fill liners and bake 18–22 minutes until set.
  7. Make frosting: Beat cream cheese, butter, powdered sugar, lime juice, zest, and vanilla until creamy.
  8. Frost & serve: Cool cupcakes completely before frosting.

Notes

For extra flair, garnish with lime slices or zest curls. A graham cracker crumble topping adds a key lime pie twist.
