  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup cold unsalted butter, cubed
  • 1 egg
  • 1 tsp vanilla extract

Lemon Filling

  • 1 cup granulated sugar
  • 2 tbsp all-purpose flour
  • 1/2 cup fresh lemon juice
  • 1 tbsp lemon zest
  • 2 large eggs

Instructions

  1. Preheat oven: Set to 350°F (175°C). Line a baking pan with parchment paper.
  2. Make crumb mixture: Mix flour, sugar, baking powder, and salt. Cut in butter until crumbly. Mix in egg and vanilla.
  3. Form base: Press half the mixture into the bottom of the pan and set the other half aside for topping.
  4. Make filling: Whisk sugar, flour, lemon juice, zest, and eggs until smooth.
  5. Assemble: Pour lemon filling over crust. Sprinkle remaining crumb mixture on top.
  6. Bake: Bake 30–35 minutes until golden and set.
  7. Cool: Let cool completely before slicing into bars.

Notes

Chill before slicing for cleaner cuts. Dust with powdered sugar for extra sweetness. Add more zest for a stronger lemon flavor.
