- 1 cup granulated sugar
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1 cup cold unsalted butter, cubed
- 1 egg
- 1 tsp vanilla extract

- 1 cup granulated sugar
- 2 tbsp all-purpose flour
- 1/2 cup fresh lemon juice
- 1 tbsp lemon zest
- 2 large eggs

- Preheat oven: Set to 350°F (175°C). Line a baking pan with parchment paper.
- Make crumb mixture: Mix flour, sugar, baking powder, and salt. Cut in butter until crumbly. Mix in egg and vanilla.
- Form base: Press half the mixture into the bottom of the pan and set the other half aside for topping.
- Make filling: Whisk sugar, flour, lemon juice, zest, and eggs until smooth.
- Assemble: Pour lemon filling over crust. Sprinkle remaining crumb mixture on top.
- Bake: Bake 30–35 minutes until golden and set.
- Cool: Let cool completely before slicing into bars.
Notes
Chill before slicing for cleaner cuts. Dust with powdered sugar for extra sweetness. Add more zest for a stronger lemon flavor.
