- 4 cups green cabbage, shredded

- 1 tsp dried thyme
- 1 bay leaf
- 1 lemon, juiced and zested
- 1/4 cup fresh dill, chopped
- Salt and black pepper, to taste

- Sauté the vegetables: Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery. Cook for 5–6 minutes until softened.
- Add garlic and cook for 1 minute until fragrant.
- Simmer the soup: Add broth, cabbage, potatoes, thyme, and bay leaf. Bring to a boil.
- Reduce heat and simmer for 20–25 minutes, until the potatoes are tender.
- Remove the bay leaf.
- Stir in the lemon juice, lemon zest, and fresh dill.
- Season with salt and black pepper to taste.
- Serve: Ladle into bowls and garnish with additional fresh dill and lemon slices if desired.
Notes
For extra protein, add shredded chicken or white beans. The lemon should be added at the end of cooking to preserve its fresh flavor. This soup stores well in the refrigerator for up to 4 days.
