Scale

Ingredients

For the Overnight Oats

  • 1 cup old-fashioned rolled oats
  • 1 cup light coconut milk
  • 1/2 cup plain or vanilla Greek yogurt
  • 1 cup fresh mango, diced
  • 1 tbsp chia seeds
  • 1 tbsp maple syrup or honey
  • 1/2 tsp vanilla extract
  • Pinch of salt

Optional Toppings

  • Fresh mango cubes
  • Toasted coconut flakes
  • Sliced banana
  • Chopped macadamia nuts
  • Almonds or pecans
  • Fresh mint leaves
  • Extra chia seeds

Instructions

Instructions

  1. Combine the ingredients: In a mason jar or airtight container, stir together the oats, coconut milk, Greek yogurt, chia seeds, maple syrup, vanilla extract, and salt until well combined.
  2. Add the mango: Fold in half of the diced mango, reserving the remaining mango for topping.
  3. Refrigerate overnight: Cover the container and refrigerate for at least 6 hours or overnight so the oats become soft and creamy.
  4. Stir and adjust: Before serving, stir the oats well. Add a splash of coconut milk if you prefer a thinner consistency.
  5. Garnish and enjoy: Top with the remaining mango, toasted coconut, nuts, banana slices, or your favorite toppings. Serve chilled.

Notes

These overnight oats stay fresh in the refrigerator for up to 4 days, making them perfect for weekly meal prep. Frozen mango works just as well as fresh mango—simply thaw before using. For a vegan version, substitute dairy-free yogurt and maple syrup instead of honey.
