  • 2 cups cherry tomatoes
  • 1 medium zucchini, sliced
  • 1 red bell pepper, sliced
  • 3 cloves garlic, minced
  • 1/3 cup balsamic vinegar
  • 2 tbsp honey
  • 1 tbsp Dijon mustard
  • 2 tbsp fresh basil, chopped

  2. Sear the chicken: Heat olive oil in a large skillet over medium-high heat. Cook chicken for 4–5 minutes per side until golden brown. Remove and set aside.
  3. Add zucchini, bell pepper, tomatoes, and minced garlic to the skillet. Cook for 4–5 minutes until slightly softened.
  4. Prepare the balsamic glaze: In a small bowl, whisk together balsamic vinegar, honey, and Dijon mustard.
  5. Return the chicken to the skillet and pour the balsamic mixture over everything.
  6. Reduce heat to medium-low, cover, and cook for 10–12 minutes until the chicken reaches an internal temperature of 165°F (74°C).
  7. Spoon the glaze over the chicken during the final few minutes of cooking.
  8. Serve: Garnish with fresh basil and serve immediately.
