Scale

Ingredients

For the Chicken

  • 2 lbs boneless skinless chicken breasts, sliced into strips
  • 1 tsp Italian seasoning
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil

For the Pasta Sauce

  • 12 oz penne or rigatoni pasta
  • 3 tbsp butter
  • 4 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cups heavy cream
  • 1 cup chicken broth
  • 1 cup freshly grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 1/2 tsp red pepper flakes (optional)
  • Salt and black pepper to taste
  • 2 tbsp fresh basil, chopped

Optional Garnish

  • Extra Parmesan cheese
  • Fresh basil leaves
  • Cracked black pepper

Instructions

Instructions

  1. Cook the pasta: Boil pasta in salted water according to package directions until al dente. Reserve 1/2 cup pasta water, then drain.
  2. Season and cook the chicken: Toss chicken with Italian seasoning, garlic powder, paprika, salt, and pepper. Heat olive oil in a large skillet and cook chicken until golden and fully cooked. Remove and set aside.
  3. Build the sauce: In the same skillet, melt butter and sauté garlic until fragrant. Add sun-dried tomatoes and cook for 1 minute.
  4. Create the creamy Parmesan sauce: Pour in heavy cream and chicken broth. Simmer gently, then stir in Parmesan cheese, Italian seasoning, and red pepper flakes until smooth.
  5. Combine everything: Add cooked pasta and chicken back to the skillet. Toss until coated in the creamy sauce. Add reserved pasta water if needed for a smoother consistency.
  6. Serve: Top with fresh basil, extra Parmesan, and black pepper before serving warm.

Notes

For the creamiest sauce, use freshly grated Parmesan instead of pre-shredded cheese. You can substitute chicken thighs for extra juiciness or add spinach and mushrooms for more vegetables. Store leftovers in an airtight container and reheat gently with a splash of cream or broth.
