Crumble Base
- 2 cups all-purpose flour
- 1 cup rolled oats
- 3/4 cup brown sugar
- 1/2 tsp cinnamon
- 1/2 tsp salt
- 3/4 cup cold butter, cubed
Cream Layer
- 8 oz cream cheese, softened
- 1/3 cup sugar
- 1 egg
- 1 tsp vanilla extract

- 3 cups sliced peaches (fresh or canned, drained)
- 2 tbsp sugar
- 1 tbsp cornstarch
- 1/2 tsp cinnamon

- Preheat oven: Set to 350°F (175°C). Line a baking pan with parchment paper.
- Make crumble: Mix flour, oats, brown sugar, cinnamon, and salt. Cut in butter until crumbly. Reserve 1 cup for topping.
- Press base: Press remaining crumble mixture into pan and bake 10 minutes.
- Make cream layer: Beat cream cheese, sugar, egg, and vanilla until smooth. Spread over crust.
- Prepare peaches: Toss peaches with sugar, cornstarch, and cinnamon.
- Assemble: Layer peaches over cream filling and sprinkle reserved crumble on top.
- Bake: Bake for 35–40 minutes until golden and set.
- Cool: Let cool completely before slicing into bars.
Notes
Fresh peaches give the best flavor, but canned peaches work well too. Chill before slicing for clean bars.
