  1. Prepare the puff pastry: Preheat oven to 400°F (200°C). Roll out the puff pastry, cut into rectangles, brush with egg wash, and sprinkle lightly with sugar.
  2. Bake the layers: Place pastry pieces on a lined baking sheet and bake for 15–18 minutes until golden and crisp. Cool completely.
  3. Make the raspberry filling: Cook raspberries, sugar, and lemon juice in a saucepan until softened. Stir in the cornstarch mixture and cook until thickened. Cool completely.
  4. Prepare the cream: Beat cream cheese, powdered sugar, vanilla, and lemon zest until smooth. Add whipped cream and mix until light and fluffy.
  5. Assemble the napoleons: Place one pastry layer on a plate, add cream filling and raspberry mixture, then top with another pastry layer. Repeat for remaining desserts.
  6. Finish and serve: Dust with powdered sugar, garnish with fresh raspberries and mint, and serve chilled.

Notes

For the crispiest pastry, assemble the napoleons shortly before serving. The raspberry filling and cream can be prepared ahead of time and stored separately in the refrigerator. Use fresh raspberries for the brightest flavor and color.
