  • 1 small onion, finely diced
  • 3 cloves garlic, minced

For the Cream Sauce

  • 3 tbsp all-purpose flour
  • 2 cups whole milk
  • 1 cup heavy cream
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1 tsp fresh thyme leaves (optional)
  • 1½ cups shredded sharp cheddar cheese
  • 1/2 cup grated Parmesan cheese

  • Fresh parsley, chopped
  • Extra Parmesan cheese

  1. Preheat oven: Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. Cook aromatics: Melt butter in a saucepan over medium heat. Add onion and cook until softened, about 4 minutes. Stir in garlic for 30 seconds.
  3. Make the sauce: Whisk in the flour and cook for 1 minute. Slowly whisk in milk and heavy cream until smooth.
  4. Season with salt, pepper, paprika, and thyme. Simmer until slightly thickened.
  5. Remove from heat and stir in Parmesan and half of the cheddar cheese until melted.
  6. Layer the potatoes: Arrange half of the potato slices in the baking dish. Pour half of the sauce over the potatoes.
  7. Repeat with the remaining potatoes and sauce. Sprinkle the remaining cheddar cheese over the top.
  8. Cover with foil and bake for 50 minutes.
  9. Remove the foil and continue baking for 25-30 minutes until golden brown and the potatoes are fork tender.
  10. Let rest for 10 minutes before serving. Garnish with parsley if desired.

Notes

Slice the potatoes evenly for consistent cooking. Letting the dish rest before serving helps the creamy sauce thicken beautifully. Gruyère cheese can be substituted for cheddar for an even richer flavor.
