  • 2 tbsp fresh mint leaves, chopped
  • 2 green onions, sliced
  • 1/4 cup toasted sesame seeds
  • 1/4 cup chopped peanuts (optional)

For the Sesame Dressing

  • 3 tbsp sesame oil
  • 2 tbsp rice vinegar
  • 1 tbsp soy sauce
  • 1 tbsp honey or maple syrup
  • 1 tsp fresh ginger, grated
  • 1 garlic clove, minced
  • 1 tsp lime juice
  • Salt and black pepper, to taste

  2. Add carrot ribbons, red cabbage, cilantro, mint, and green onions to a large bowl.
  3. Make the dressing: Whisk together sesame oil, rice vinegar, soy sauce, honey, ginger, garlic, lime juice, salt, and pepper.
  4. Pour the sesame dressing over the vegetables and toss gently until evenly coated.
  5. Let the salad sit for 10–15 minutes to allow the flavors to combine.
  6. Serve: Sprinkle with toasted sesame seeds and chopped peanuts before serving.

Notes
