  • 1.5 lbs boneless, skinless chicken thighs or breasts
  • 2 tbsp olive oil
  • 4 tbsp unsalted butter, melted
  • 4 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • 1 lb baby potatoes, halved
  • 2 cups broccoli florets
  • 1 lemon, sliced or juiced
  • Fresh parsley for garnish

  1. Preheat oven: Set to 400°F (200°C) and line a sheet pan.
  2. Prepare sauce: Mix melted butter, garlic, olive oil, salt, pepper, paprika, and Italian seasoning.
  3. Coat chicken: Place chicken on the sheet pan and brush with garlic butter mixture.
  4. Add vegetables: Arrange potatoes and broccoli around the chicken. Drizzle remaining sauce over everything.
  5. Bake: Roast for 30–35 minutes until chicken is cooked through and vegetables are tender.
  6. Finish: Squeeze lemon juice over the pan and garnish with fresh parsley.
  7. Serve: Serve hot directly from the sheet pan.

Notes

For extra crispiness, broil for 2–3 minutes at the end. You can swap broccoli with green beans, carrots, or zucchini.
