- Cook the chicken: Add chicken and pour in the chicken broth. Bring to a boil, then reduce heat and simmer for 15–20 minutes until chicken is cooked through.
- Remove chicken, shred it with two forks, and return it to the pot.
- Add the orzo: Stir in orzo and cook according to package directions until tender.
- Add spinach and cook until wilted.
- Stir in lemon juice, lemon zest, and fresh parsley.
- Season with salt and black pepper to taste.
- Serve: Enjoy warm with extra lemon slices and herbs if desired.
Notes
For the best texture, cook orzo separately if you plan to store leftovers, as it will continue absorbing broth over time. Add extra lemon juice before serving for a brighter flavor.
