  • 2 tbsp Worcestershire sauce
  • 2 tbsp lemon juice

  • 1 tbsp Dijon mustard
  • 1 tsp smoked paprika
  • 1 tsp onion powder
  • 1 tsp black pepper
  • 1/2 tsp kosher salt

For the Kabobs

  • 2 bell peppers, cut into chunks
  • 1 large red onion, cut into wedges
  • 8 oz whole mushrooms
  • 1 zucchini, sliced into thick rounds
  • Wooden or metal skewers

  1. Marinate the steak: Whisk together olive oil, soy sauce, Worcestershire sauce, lemon juice, garlic, Dijon mustard, paprika, onion powder, salt, and pepper. Add the steak cubes and marinate for at least 30 minutes or up to 8 hours in the refrigerator.
  2. Prepare the vegetables: Cut the peppers, onion, and zucchini into large, even pieces. Clean the mushrooms and pat dry.
  3. Assemble the kabobs: Thread the marinated steak and vegetables onto skewers, alternating ingredients for even cooking and colorful presentation.
  4. Grill: Preheat the grill to medium-high heat (about 425°F). Grill the kabobs for 8–12 minutes, turning every 2–3 minutes, until the steak reaches your desired doneness.
  5. Serve: Let the kabobs rest for 5 minutes before serving. Garnish with chopped parsley and serve with rice, grilled potatoes, or a fresh salad.

Notes

Sirloin, ribeye, or New York strip all work well for kabobs. If using wooden skewers, soak them in water for at least 30 minutes before grilling to prevent burning. Avoid overcooking the steak to keep it tender and juicy.
