  1. Prepare the oven: Preheat oven to 375°F (190°C). Line a 12-cup muffin pan with paper liners.
  2. Make the cream cheese filling: Beat cream cheese, powdered sugar, vanilla, and egg yolk until smooth and creamy. Set aside.
  3. Mix the muffin batter: In a large bowl, whisk flour, sugar, baking powder, baking soda, and salt. In another bowl, combine eggs, buttermilk, oil, and vanilla. Add wet ingredients to dry ingredients and stir gently until combined.
  4. Add strawberries: Fold diced strawberries into the batter, being careful not to overmix.
  5. Fill the muffin cups: Add a spoonful of batter to each muffin cup, add a small amount of cream cheese filling, then cover with more batter until cups are about three-quarters full.
  6. Bake: Sprinkle with coarse sugar if desired and bake for 20–25 minutes until golden and a toothpick comes out clean from the muffin portion.
  7. Cool and serve: Let muffins cool for 10 minutes before transferring to a rack. Serve warm or at room temperature.
