- Prepare the pan: Preheat the oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
- Make the cookie base: Whisk together the flour, baking powder, and salt. Cream the butter and sugar until light and fluffy, then beat in the egg and vanilla. Mix in the dry ingredients until a soft dough forms. Press the dough evenly into the prepared pan.
- Add the fruit: Toss the strawberries and rhubarb with the sugar and cornstarch. Spread the fruit evenly over the cookie dough.
- Bake: Bake for 25–30 minutes, or until the edges are lightly golden and the center is set. Cool completely in the pan.
- Frost and serve: Beat together the cream cheese, butter, powdered sugar, and vanilla until smooth. Spread over the cooled bars, then slice into squares and serve.
Notes
For the cleanest slices, refrigerate the bars for 30 minutes after frosting. Fresh fruit gives the best texture, but frozen strawberries and rhubarb can be used if thawed and well drained. Garnish with fresh strawberry slices for an extra-pretty presentation.
