  • 1/4 cup powdered sugar

  • 1 tsp vanilla extract
  • 1/2 cup finely chopped fresh strawberries
  • Optional: coarse sugar for topping

  2. Combine dry ingredients: In a medium bowl, whisk together flour, baking powder, and salt.
  3. Cream butter and sugar: In a large bowl, beat butter, granulated sugar, and powdered sugar until fluffy. Add egg and vanilla, mixing well.
  4. Fold in strawberries: Gently fold in chopped strawberries.
  5. Form cookies: Scoop tablespoon-sized balls onto baking sheets, spacing 2 inches apart. Flatten slightly with hand or spatula. Sprinkle coarse sugar on top if desired.
  6. Bake: Bake 12–15 minutes, until edges are lightly golden. Cool on baking sheet 5 minutes, then transfer to a wire rack to cool completely.

Notes
