- Cream butter and sugar: In a large bowl, beat butter, granulated sugar, and powdered sugar until fluffy. Add egg and vanilla, mixing well.
- Fold in strawberries: Gently fold in chopped strawberries.
- Form cookies: Scoop tablespoon-sized balls onto baking sheets, spacing 2 inches apart. Flatten slightly with hand or spatula. Sprinkle coarse sugar on top if desired.
- Bake: Bake 12–15 minutes, until edges are lightly golden. Cool on baking sheet 5 minutes, then transfer to a wire rack to cool completely.
Notes
For best results, use fresh, firm strawberries. Dough can be chilled for 30 minutes for easier handling. Cookies are best eaten within 2 days but can be stored in an airtight container for up to 4 days.
