  1. Prepare the liquid: In a measuring cup, stir together the coconut water, honey (if using), and fresh lime juice until well combined.
  2. Fill the molds: Divide the fresh fruit evenly among popsicle molds, mixing colors for a vibrant appearance.
  3. Add the coconut water: Carefully pour the coconut water mixture into each mold, leaving about 1/4 inch of space at the top.
  4. Freeze: Insert popsicle sticks and freeze for at least 6 hours or overnight until completely solid.
  5. Serve: To release the popsicles, run the molds under warm water for 10–15 seconds. Enjoy immediately for a cool and refreshing summer treat.

Notes

Use naturally sweet, ripe fruit for the best flavor without added sugar. Feel free to swap in watermelon, peaches, grapes, blackberries, or oranges depending on what’s in season. Coconut water with no added sugar works best for a light and refreshing popsicle.
