  • 3/4 cup granulated sugar
  • 1 cup heavy cream
  • 1 tsp vanilla extract
  • 1 tbsp all-purpose flour
  • Pinch of salt

  1. Prepare the crust: Combine flour, sugar, and salt. Cut in the cold butter until crumbly. Mix in the egg yolk and ice water until a dough forms. Wrap and chill for 30 minutes.
  2. Preheat the oven: Heat oven to 375°F (190°C). Roll out the dough and press it into a 9-inch tart pan. Prick the bottom with a fork and bake for 12 minutes.
  3. Arrange the rhubarb: Spread the chopped rhubarb evenly over the partially baked crust.
  4. Prepare the custard: Whisk together eggs, sugar, heavy cream, vanilla, flour, and salt until smooth.
  5. Fill the tart: Carefully pour the custard mixture over the rhubarb.
  6. Bake: Return the tart to the oven and bake for 35–40 minutes, or until the custard is just set and lightly golden around the edges.
  7. Cool and serve: Let the tart cool completely before slicing. Dust with powdered sugar if desired and serve chilled or at room temperature.

Notes

For the prettiest tart, use bright red rhubarb stalks. The tart tastes even better after chilling for several hours. Serve with whipped cream or vanilla ice cream for an extra-special dessert.
