- 1/4 cup brown sugar
- 3 cloves garlic, minced

- 1/2 tsp black pepper
- Optional: 1 tbsp cornstarch + 2 tbsp water (to thicken sauce)
- Optional garnish: green onions or sesame seeds

- Place pork in the bottom of the slow cooker.
- In a bowl, whisk together pineapple (with juice), soy sauce, brown sugar, garlic, ginger, and black pepper.
- Pour sauce over the pork.
- Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours until pork is fork-tender.
- Optional: shred or slice pork before serving.
- Optional thickening: remove pork, whisk cornstarch slurry into sauce, cover and cook on HIGH for 10–15 minutes.
- Serve over rice or noodles and garnish if desired.
Notes
Pork shoulder gives the most tender results, while pork loin is leaner and slices well. Add bell peppers or onions during the last hour for extra flavor and texture.
