  • 1.5 lbs boneless, skinless chicken thighs or breasts
  • 1 tbsp olive oil
  • 1 cup pineapple chunks (fresh or canned)
  • 1/3 cup soy sauce
  • 1/4 cup brown sugar
  • 2 tbsp honey
  • 3 cloves garlic, minced
  • 1 tsp grated ginger
  • 1 tbsp rice vinegar
  • 1 tbsp cornstarch
  • 2 tbsp water (for slurry)
  • 1/2 tsp black pepper
  • Green onions, sliced (for garnish)
  • Sesame seeds (optional)

  1. Cook chicken: Heat olive oil in a skillet. Cook chicken until browned and cooked through. Remove and set aside.
  2. Make sauce: In the same pan, add garlic and ginger and sauté for 1 minute.
  3. Add soy sauce, brown sugar, honey, rice vinegar, and pineapple chunks. Simmer 3–4 minutes.
  4. Thicken: Stir in cornstarch slurry and cook until sauce becomes glossy and thick.
  5. Combine: Return chicken to the pan and coat in sauce.
  6. Serve: Garnish with green onions and sesame seeds. Serve over rice.

Notes

For extra flavor, grill the pineapple before adding it. Add chili flakes or sriracha for a spicy-sweet version.
