  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 tsp dried thyme

  • 1/4 cup all-purpose flour
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 1/2 cups uncooked orzo pasta
  • 2 cups cooked shredded chicken
  • 1 cup frozen peas
  • 1/2 cup corn kernels
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper, to taste
  • 2 tbsp fresh parsley, chopped

  1. Sauté the vegetables: Heat butter and olive oil in a large pot over medium heat. Add onion, carrots, and celery. Cook for 5–6 minutes until softened.
  2. Add garlic, thyme, and rosemary. Cook for 1 minute until fragrant.
  3. Create the creamy base: Stir in flour and cook for 1 minute. Slowly whisk in chicken broth until smooth.
  4. Add heavy cream, orzo, salt, and pepper. Bring to a gentle simmer.
  5. Cook for 10–12 minutes, stirring occasionally, until orzo is tender.
  6. Stir in shredded chicken, peas, and corn. Cook for another 3–5 minutes until heated through.
  7. Mix in Parmesan cheese until melted and creamy.
  8. Serve: Garnish with fresh parsley and enjoy warm.

Notes

Stir frequently while cooking the orzo because it can stick to the bottom of the pot. Add extra broth when reheating, as the pasta will continue absorbing the creamy sauce.
