  • 2 tbsp olive oil
  • 6 cloves garlic, minced
  • 1 can (15 oz) tomato sauce
  • 1 tbsp tomato paste
  • 1 tsp Italian seasoning
  • 1/2 tsp dried basil
  • 1/4 tsp red pepper flakes (optional)
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper, to taste
  • 2 tbsp fresh parsley or basil, chopped

  1. Cook the pasta: Bring a large pot of salted water to a boil. Cook pasta until al dente according to package directions. Reserve 1/2 cup pasta water and drain.
  2. Prepare the sauce: Heat olive oil in a large skillet over medium heat. Add garlic and sauté for 1 minute until fragrant.
  3. Stir in tomato paste and cook for 30 seconds.
  4. Add tomato sauce, Italian seasoning, basil, and red pepper flakes. Simmer for 5 minutes.
  5. Reduce heat and stir in heavy cream until smooth and fully incorporated.
  6. Add Parmesan cheese and stir until melted.
  7. Season with salt and black pepper to taste.
  8. Add cooked pasta and toss until coated. Use reserved pasta water if needed to loosen the sauce.
  9. Serve: Garnish with fresh parsley or basil and additional Parmesan cheese.

Notes

Freshly grated Parmesan melts more smoothly than pre-shredded cheese. Add grilled chicken, shrimp, or sautéed vegetables to make the dish more substantial. Leftovers can be reheated with a splash of milk or cream.
