  • 1 tbsp sesame oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 6 cups chicken broth
  • 4 cups green cabbage, shredded
  • 2 cups coleslaw mix
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp sriracha or chili garlic sauce (optional)
  • 3 green onions, sliced
  • 1 tbsp toasted sesame seeds
  • Salt and black pepper, to taste

  1. Cook the pork: Heat sesame oil in a large pot over medium-high heat. Add ground pork and cook until browned, breaking it apart as it cooks.
  2. Add onion and cook for 4–5 minutes until softened.
  3. Stir in garlic and ginger and cook for 1 minute until fragrant.
  4. Build the soup: Pour in the chicken broth, soy sauce, rice vinegar, and sriracha if using.
  5. Add the shredded cabbage and coleslaw mix. Stir well.
  6. Bring to a gentle boil, then reduce heat and simmer for 15–20 minutes until the vegetables are tender.
  7. Season with salt and black pepper to taste.
  8. Serve: Ladle into bowls and garnish with green onions and toasted sesame seeds.

Notes

For extra protein, stir in a lightly beaten egg during the final minute of cooking to create delicate egg ribbons. This soup is naturally low in carbohydrates and stores well in the refrigerator for up to 4 days.
